Tortang Talong with Giniling is an eggplant omelet with ground beef is not only a staple in Filipino households, but also a nutritious and hearty meal that’s easy to prepare. Packed with protein-rich beef and low-calorie eggplants, this dish is as healthy as it is delicious.

Ingredients:

  • 1 Egg per eggplant
  • Salt and Pepper
  • 4-6 Eggplant
  • Ground Beef

Ingredients/Seasoning for Ground Beef:

  • 3-4 Cherry Tomatoes
  • 1 Shallots, finely diced
  • 4 Garlic Cloves, minced
  • Chives, chopped
  • Salt and Pepper to taste
  • 1 tsp Beef Bouillon
  • 1/2 tsp Nutmeg (Optional)
  • 1/2 tsp Coriander (Optional)

Instructions:

1. Poke holes into eggplants with a fork or knife.

2. Broil or grill the eggplants until they soften.

3. Prepare and cook the beef. First saute shallots, garlic, chives, and tomatoes. Add in beef and 4. season the beef with beef bouillon, coriander, nutmeg (optional), black pepper, and a little salt.

Once the eggplant is done, peel the skin off.

5. Using one egg per eggplant, add a dash of salt and mix. Flatten the eggplant into the mixed egg using a fork.

6. Cook the eggplant in a small non-stick pan. Add in the beef mixture on top of eggplant and allow to cook for 1-2 minutes then flip to cook the other side.
