Similarly, you can play around with the vegetables, incorporating any leftover veggies you have in your fridge.
In this version of the recipe, we’ve used a delightful mix of garlic, onions, chives, carrots, and blanched spinach, but feel free to get creative with your own combinations. The aim is to reduce waste and make the most of the ingredients you have on hand. The addition of Best Foods Mayonnaise adds a creamy richness to the batter, further enhancing the flavor of the patties.
Another twist on the traditional recipe is the addition of a Dinanche Mayo dip. Dinanche is a spicy sauce made from local hot peppers and sometimes coconut milk, and is a staple in Chamorro cuisine. Mixing it with mayonnaise creates a creamy, spicy dip that pairs perfectly with the Shrimp Patties.

Chamorro Shrimp Patties
Chamorro Shrimp Patties are a hearty and flavorful dish from Guam, made with fresh shrimp, a variety of vegetables, and a rich batter. This versatile recipe allows for creativity with ingredients, making it a great way to use up leftovers. Served with a spicy Dinanche Mayo dip, these shrimp patties are a truly delightful meal.
Ingredients
- 1/4 cup evaporated milk
- 2 eggs
- 1 tbsp mayo
- 1 tbsp lobster base
- 1 1/2 cups flour
- 2 tbsp baking powder
- 1 tbsp mayo
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 garlic cloves
- 2 cups cooked shrimp (chopped)
- 1 medium onion, finely diced
- 1/2 cup chives
- 1/2 cup carrots
- 1/2 cup blanched spinach
- Chives, for garnish
- Lemon slices
For the Denanche Dip:
- 1 tbsp favorite dinanche, I used Suprim Denanche
- 2 tbsp Best Foods Mayonnaise
Instructions:
- Whisk eggs and evaporated milk.
- Add in vegetables and shrimp.
- Add in flour, baking powder, black pepper, garlic powder, onion powder, Best Foods Mayonnaise, Lobster base.
- Heat up oil of choice to 350 Degrees and, using two spoons (a small ice cream scooper may help too), slowly drop batter into the oil. Cook until golden brown.
- Serve with Dinanche Mayo dip, lemon, and enjoy!
