While brainstorming ideas for my second-ever collaboration with a distributor on Guam that distributes HORMEL™ Corned Beef, the first thing that came to mind was one of the most loved dishes from my childhood—Corned Beef Patties. It’s always exciting to collaborate with brands and distributors, especially when it brings you back to your roots.
A Nostalgic Journey
My dad used to make these patties for us all the time. I remember how the aroma filled our home, making my mouth water in anticipation. In no time at all, we would be sitting around the table, enjoying the delicious patties. The taste of these patties, rich with corned beef and a delightful mix of veggies, takes me right back to those days. It was only natural for me to revisit this beloved recipe, but this time, with a little twist of my own.
Ingredients and Substitutions
For my revamped Corned Beef Patties, I used some of my favorite ingredients:
- Green onions, for that mild, sweet flavor
- Garlic, a must for any dish
- Bell peppers, adding a nice crunch
- Tomatoes, for a slight tanginess
- Flour, eggs, and half-and-half for the batter
- And of course, Corned Beef, the star of the show
In this post, I used Hormel Corned Beef but you may use any other brand you prefer as well. If you want to substitute any of the veggies, feel free to do so. You can also use milk instead of half-and-half for the batter. The key here is to maintain the rich flavor of the corned beef, complemented by the veggies.
Cooking and Pairing
The best part about these patties is how easy they are to make. Mix all the ingredients together, shape them into patties, and pan-fry for a few minutes. Voila! You have your delicious Corned Beef Patties ready.
I love to serve these patties with garlic rice and some sunny-side-up eggs. The combination is nothing short of perfection. However, these patties are versatile and can be paired with a variety of sides. So feel free to get creative!

We’re taking a trip down memory lane with my revamped Corned Beef Patties! Made originally with HORMEL™ Corned Beef, you could use your favorite corned beef brand, and a mix of my favorite veggies – bell peppers, green onions, garlic, and cherry tomatoes – all nestled in a simple batter, then pan-fried till they’re just perfect. Quick and easy to whip up, these patties are my go-to for a hearty, nostalgic meal. And trust me, they are simply divine when paired with garlic rice and sunny-side-up eggs. Enjoy!
Ingredients:
- 1 can HORMEL™ Corned Beef
- 3 baby bell peppers, julienned
- 3 garlic cloves, minced
- 3 stalks green onions, cut in 1-2 inches
- 5 cherry tomatoes, diced
For the batter:
- ½ cup flour
- ¼ cup half and half
- 2 tsp baking powder
- 2 eggs
Instructions:
- Prep your vegetables. Slice your bell peppers and green onions into thin slices and mince the garlic and cherry tomatoes.
- (Optional: Saute bell peppers and garlic. I like to do this for my one-year old son and for added flavor)
- Chop HORMEL™ Corned Beef into cubes and set aside.
- In a separate bowl, whisk 2 eggs and ¼ cups half and half. Then add the flour and baking powder. Mix well.
- Add in all your vegetables and HORMEL™ Corned Beef. Mix with the batter until fully coated, making sure not to overmix.
- In a separate heated pan, pour in your oil of choice and, using a spoon, dollop some of that mixture and place it onto the pan, using a spatula to slightly flatten the batter. After about 1-2 minutes or until brown, flip to the other side and flatten.
- Serve with some rice, eggs, and enjoy!
