Ingredients:
- 1 Egg per eggplant
- Salt and Pepper
- 4-6 Eggplant
- Ground Beef
Ingredients/Seasoning for Ground Beef:
- 3-4 Cherry Tomatoes
- 1 Shallots, finely diced
- 4 Garlic Cloves, minced
- Chives, chopped
- Salt and Pepper to taste
- 1 tsp Beef Bouillon
- 1/2 tsp Nutmeg (Optional)
- 1/2 tsp Coriander (Optional)
Instructions:
1. Poke holes into eggplants with a fork or knife.
2. Broil or grill the eggplants until they soften.
3. Prepare and cook the beef. First saute shallots, garlic, chives, and tomatoes. Add in beef and 4. season the beef with beef bouillon, coriander, nutmeg (optional), black pepper, and a little salt.
Once the eggplant is done, peel the skin off.
